Estate Manolesakis<br \/>\n80 grams of orzo with porcini &#8211; Kapasta<br \/>\n70 ml olive oil &#8211; Mesigaia<br \/>\n10 grams of porcini mushrooms<br \/>\n50 grams of sun-dried tomatoes<br \/>\n1 piece of dry onion<br \/>\n1 piece of green pepper<br \/>\n1 piece of carrot<br \/>\nA clove of garlic<br \/>\n120 grams of graviera Greek cheese ( gruy\u00e8re )<br \/>\n300 ml of water<\/p>\n<p>Pepper<\/p>\n<p>Method<br \/>\nIn a pan, saute the onion, pepper, carrot, garlic in olive oil, adding the orzo . Extinguish with the wine and as soon as the alcohol evaporates, slowly add the water and stir to boil the pasta with the vegetables.<br \/>\nWe put some wine in the porcini to soften them and add them to the pan with the above.<br \/>\nFinally, cut the sun-dried tomato into smaller pieces. Let it cook for about 15 minutes until it has absorbed enough of its liquid. At the end, add some graviera Greek cheese ( ( gruy\u00e8re ) to chew and season with the spices.<br \/>\nWe serve and put on top the cheese at the last minute in pieces or flakes.<br \/>\nIdeally served with Malagouzia &#8211;
