Kapasta<br \/>\n320 gr Lamb &#8211; Zournas Farm<br \/>\n200 gr Milk butter &#8211; Militsopoulos<br \/>\nIDEAL WINE FOR THE DISH: Meleagros Roditis Moschato Wine &#8211; Grivas Wines<br \/>\n80 grams of Kalavryta Saganotiri<br \/>\n1 piece of onion<br \/>\n2 cloves of garlic<br \/>\n100gr fresh or frozen spinach<br \/>\nZest and juice of 1 lemon<br \/>\n750 g water or broth<br \/>\nSalt<br \/>\nPepper<\/p>\n<p>Method<\/p>\n<p>Add 2 tablespoons of butter to a saucepan, cut the lamb into small pieces and saute slightly. Add the chopped onion and garlic and continue to mix adding the risotto at the end. Deglaze with wine, add water little by little (per 100 g) mixing the ingredients in the pot one after the other.<br \/>\nAfter finishing the water, add salt, pepper, spinach, lemon juice and the boiling of the ingredients is completed. After the liquids have been saved, bind the whole mixture with butter and grated hard cheese. Served hot with lemon zest and cheese flakes.
